  • White beans (tinned)3 tins
  • Onion2
  • Carrot1
  • Red bell pepper1
  • Tomato passata300 ml
  • Sunflower oil40 ml
  • Bay leaves2
  • Sweet paprika5 g
  • Dried thyme3 g
  • Parsley1 bunch

Method

    Soften the diced onion, carrot and pepper in the oil for 8 minutes.

    Add the paprika, passata, bay leaves and thyme, then the rinsed beans and a glass of water.

    Simmer gently for 20 minutes until the sauce thickens.

  4. 4

    Sprinkle with chopped parsley and serve with bread and pickles.
